From a rich & fruity wine with notes of peach, apricot and floral notes to wines characterized by red and black fruits, spices, toasted bread and vanilla.
This evening we had 3 beautiful French wines from The Rolland Collection from Bordeaux, including Chateau Bertineau Saint - Vincent in Lalande de Pomerol, Chateau Fontenil in Fronsac and Chateau La Grande Clotte in Lussac-Saint-Emilion and 1 other wine, paired to perfection with Michelin worthy dishes prepared by Chef Robin of Housen's culinary experience. Paired with delicious lion fish Ceviche, oriental red salmon, sirloin steak and flexible chocolate.
Chateau La Grande Clotte Vineyards,
The 8.4 hectare vineyard of Chateau La Grande Clotte is planted the red wine, 7 hectares are planted to 80% Merlot and 20% Cabernet Franc. 1.4 hectares are reserved for white wine grape varieties, which are planted to 60% Sauvignon Gris, 25% Sauvignon Blanc and 15% Muscadelle. The terroir is clay, gravel, sand and limestone soils. The vines are now obtaining a good age, as they were planted in 1992. To produce Chateau La Grande Clotte Blanc, vinification takes place in 100% new, French oak barrels. The estate believes in stirring of the lees. The wine is aged for between 8 to 10 months prior to bottling, which is always done without fining or filtering. On average, the production of Chateau La Grande Clotte Blanc is only 400 cases of wine per vintage. Chateau La Grande Clotte Blanc is perfect with all types of seafood, shell fish, lobster, crab, sushi, sashimi and a wide array of cheeses.

Chateau Fontenil Fronsac Bordeaux Wine,
The 9 hectare Chateau Fontenil vineyard is planted to 90% Merlot and 10% Cabernet Franc. The property can be difficult to find, if you do not know the area well, especially driving at night, as he learned the hard way. However, clearly it is well situated in the Fronsac appellation. Traditionally, the wine of Chateau Fontenil is vinified in a combination of small, temperature controlled, wood and stainless steel vats. Starting in 2010, 20% of the production is now being whole cluster fermented, meaning that 20% of the grapes are vinified with the stems attached. The fruit that is whole cluster fermented is now vinified in 100% new, French oak barrels. Malolactic fermentation is carried out in 60% new, French oak barrels. Chateau Fontenil is aged in 60% new, French oak barrels.
There is a second wine, Filet Rouge. Aside from their Fronsac property Chateau Fontenil, Michel Rolland and Dany Rolland also own and produce Rolland Maillet, Bertineau St Vincent and La Grande Clotte Blanc, which while the vines are planted in Lussac St. Emilion, the wine is sold as a white Bordeaux blanc.
Chateau Fontenil is better with at least 2-3 years of aging in good vintages. Young vintages can be decanted for up to 1 hour, helping the wine soften to help develop the aromatic character. Older vintages might need very little decanting, just enough to remove the sediment. Chateau Fontenil offers its best drinking and should reach peak maturity between 3-15 years of age after the vintage.
Chateau Fontenil is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised and grilled dishes. Chateau Fontenil is also good when matched with Asian dishes, rich fish courses like tuna, mushrooms and pasta.
Chateau Bertineau St-Vincent, Lalande-de-Pomerol,
Comprises a 4-hectare vineyard well sited in the small appellation of Lalande de Pomerol. It is owned by guru oenologist Michel Rolland, who also owns Bon Pasteur and Fontenil, as well as acting as consultant for more than 50 other Bordeaux properties. The vineyard is planted with 80% Merlot and 20% Cabernet Franc. The grapes are harvested at optimum ripeness and are then vinified at Bon Pasteur. The wine is matured in small oak barrels and is then bottled unfiltered. Typically the wines are deeply coloured, well structured and display notes of black fruits and minerals. The wines tend to show at their best with at least 5 years of bottle age. This is one of the most popular wines from Lalande-de-Pomerol. This wine has been becoming increasingly popular over the past year.
This wine is richly perfumed, offering flavors of black-plum jelly and rich acidity. It has firm tannins in the background at this young stage, which will fill out and give the wine a ripe, concentrated character as it matures.
