Champagne Workshop - A journey to Champange, France.

Finally we had a workshop about the different kinds of champagne. Organized by De Wijn Juf and hosted by David Wever. We have learned so much about champagne

#1. A pure champagne. This champagne comes from the unique 2013 vintage. Transparence: With nothing to hide, this brut nature champagne transparently offers the natural purity of Chardonnay to all lovers of the Blanc de Blancs style. It beautifully symbolises the extreme minerality of the Oger terroir coupled with a great evolution of Chardonnay from 2013.


#2. Milan’s 2013 Symphorine Blanc de Blancs Grand Cru Brut offers up a bright bouquet of apple, white flowers and crushed rocks, followed by a medium to full-bodied, crisp and racy palate that’s tight-knit and mineral in profile, with lovely purity and structuring extract. As usual, it’s a bit more approachable than the Transparence.


#3. The Champagne Cuvée Les Origines by Assailly is 100% Chardonnay, from a single parcel (lieu-dit "Les Acacias") with old vineyards 100% Grand Cru located in Avize, in the famous Côte des Blancs. Particular vinification in "Fût de Chêne" for this delicate and mineral Champagne Brut.


#4. Laurent Vauversin’s Rose du Soir brings together Chardonnay from Oger and a small amount of Pinot Noir from Bouzy. Long and balanced, Rosé Du Soir is a pleasant fruity surprise to the palate with hints of acacia and blackcurrant.


#5. Champagne Vauversin – Millésime 2014 – Grand Cru, Extra Brut, The palate is fruity, fresh, mineral, well-balanced and offers a beautiful acidulous frame, a small fat as well as dynamism. The effervescence is fine and offers dynamism as well as a small aerial side. On the palate this Champagne expresses notes of fresh lemon, crunchy peach and small notes of crunchy apple associated with fine hints of kumquat/fresh citrus and limestone.
